1 c. sugar
3 eggs
1 c. lime juice
Zest of 3 limes
1 stick unsalted butter, melted
1 Tbsp. cornstarch
1 Tbsp. water
Whisk together sugar and eggs until smooth. Stir in lime juice, butter and lime zest.
In a separate bowl, stir cornstarch into the water until it is completely dissolved. Return to the lime mixture and cook over medium heat on stove top for 5 minutes, whisking constantly. Whisk cornstarch mixture into lime mixture and continue to cook for another 2 to 3 minutes or until thick and bubbly.
Remove from heat and continue to stir for another minute or two. Let rest and finish cooling for about 10 minutes. Filling is best when it has been refrigerated for a few hours. Once curd is cool you can place filling into decorating bag.

What kind of a zester do you have? I've never been able to get my zest to look that curly and beautiful!

I love this zester; it is sharp and fine... and it was a freebie through a magazine subscription (Cook's Illustrated or Martha Stewart). Anyway, the brand is Microplane (also the generic name of the tool if you are google-ing), and here is the link: http://us.microplane.com/ They have similar models with a handle, where mine does not. I hope it is the same. I think the key to the curl is the fine notches, different than on a cheese grater.
