Years ago, when I worked as an admin at a call center, I would make cakes for people in the office.  I had one “taster” who asked for my secret of making my cake so moist.  I told her, I bake the cake for about 5 minutes short of the directions, I let it cool in the pan for about 10 minutes, and then I pop it into the freezer.  I decorate it when it’s still frozen and it locks in all the moisture.  She said, “Okay, but what’s your recipe?”  I told her I used a box mix.  She glared at me…literally, glared at me and said, “I was a baker for 12 years and that was no box mix!  I can’t believe you won’t give me your secret!”  And she huffed away!  I was flabbergasted!  Seriously??  If you ever get to know me, you’ll know…I’ll tell you anything!   I just met you in the grocery store check-out line??  I’ll know that you have 2 kids and how long your labor was.  And you’ll know that I have 3 kids and what I’m doing with all those boxes of cake mix that are in my buggy right now.  That’s right, I said buggy – not cart…I’m from the south y’all.

What I’m trying to say is, cake mixes ROCK!
